Curried Rice Salad

Curried Rice Salad (James and Rose)

This is a fantastic salad to add to your next Barbecue! Healthy and delicious and made on brown rice...we think it'll become a favourite at your place too! 🙂

    For the rice

    • 2 cups brown rice - cooked and then semi-cooled
    • 1/2 red capsicum - finely diced
    • 1/2 green capsicum - finely diced
    • 1/2 cup currants
    • 1 cup finely sliced spring onions or shallots
    • 1/4 cup slivered almonds toasted
    • 1/4 cup sunflower seeds toasted
    • 1/2 cup chopped flat leaf parsley

    For the dressing

    • 2 tbsp indian curry paste
    • 1/4 cup rice bran oil
    • 1 tsp salt - maybe slightly more to taste
    • 2 tbsp honey
    • 2 tbsp lemon juice




    Preparing the rice


    Mix all of the prepared “For the rice” ingredients above in a large bowl.

    Preparing the dressing


    In a jug suitable for blending – add all of the dressing ingredients below and blend with a stick blender for 15 seconds.

    Combining it all


    Pour dressing over salad while rice is still warm and serve or refrigerate until ready to eat.
