Ingredients
For the rice
- 2 cups brown rice - cooked and then semi-cooled
- 1/2 red capsicum - finely diced
- 1/2 green capsicum - finely diced
- 1/2 cup currants
- 1 cup finely sliced spring onions or shallots
- 1/4 cup slivered almonds toasted
- 1/4 cup sunflower seeds toasted
- 1/2 cup chopped flat leaf parsley
For the dressing
- 2 tbsp indian curry paste
- 1/4 cup rice bran oil
- 1 tsp salt - maybe slightly more to taste
- 2 tbsp honey
- 2 tbsp lemon juice

Preparing the rice

Mix all of the prepared “For the rice” ingredients above in a large bowl.
Preparing the dressing

In a jug suitable for blending – add all of the dressing ingredients below and blend with a stick blender for 15 seconds.
Combining it all

Pour dressing over salad while rice is still warm and serve or refrigerate until ready to eat.
